Sausage Stew

Sausage Stew
 
It sounds bizarre, well actually it is! But my god it tastes fantastic. It is all stuff that I had lying around in the cupboards so I haven't bought anything special. This should serve 4 - 6 people easily.
 
 
 
Ingredients
 
  • 1 tbsp. oil
  • 1 tbsp. mixed herbs
  • 1/2 tsp. black pepper
  • 6 thick sausages
  • 2 large white potatoes
  • 6 tbsp. peas
  • 6 tbsp. sliced carrots
 
The Not-So Nitty Gritty
 
  1. Add the oil, mixed herbs and black pepper to the pan and gently heat until it starts to smell aromatic.
  2. Then cut the sausages into 6 sections each. Brown lightly.
  3. Add 1L vegetable stock to the casserole dish along with 2 large white potatoes that have been peeled and chopped into chunks.
  4. Then add the peas and carrots and leave to simmer on a reduced heat for 45 minutes to an hour.
  5. Serve with bread, lots of bread.
