Bangers and Beans Casserole
Two kinds of beans, tomatoes, sausage and stock are the basic ingredients. How simple can this get? It is a classic winter warmer to fill you up after a long day at work or in the cold and just hit the spot.
Ingredients
1 tbsp. chilli powder (leave out if the little ones haven't got the taste buds round it yet)
1 tbsp. ground pepper
Low calorie cooking spray
1 can of chopped tomatoes
1 can of baked beans
1 can of kidney beans
150ml vegetable stock OR 150ml beef stock
6 thick sausages cut into four segments each
The Not-So Nitty Gritty
Heat the casserole dish on the hob and add in the cooking spray, chilli powder and ground pepper.
Add the chopped sausages into the dish and keep moving them around the dish until a light brown and are evenly covered in the powders.
Once a light brown, add the stock, kidney beans, baked beans and tomatoes and stir in thoroughly. Replace the lid on the dish.
Leave for around 30 minutes, stirring regularly so it doesn't stick.
Serve into four dishes, ideal with jacket potatoes!

Ingredients
- Sausages (However many one desires)
- Poi lentils (However many one desires)
- Risotto rice
- 1 can of baked beans
- A good squeeze of tomato puree
- Passata (I tend to use half a bottle or a whole small carton)
- 1 chopped large onion
- Handful of mushrooms
- Couple of carrots
- 3 garlic cloves
- Chilli flakes and black pepper
As I said it is a very loose recipe.
Technique
- Dice garlic, mushrooms, carrots and onion and fry in a large oven proof dish until onion become transparent.
- Add sausages and brown.
- Add as many chilli flakes as one desires along with a good twist of black pepper.
- Add your passata and tomato puree and leave to simmer for a few minutes.
- Top up with boiling water so that all ingredients are covered.
- Add lentils and rice.
- Pop in a pre-heated oven (150) for 1 hour and 15 mins. Keep checking your casserole cookers. You don't want the bad boy to burn.
